What's better than a big
pot of beef stew during these long, stay-at-home days? I used one of
my left-over grilled steaks, and every tiny bit of frozen vegetables
left in the bags along with fresh carrots, potatoes, onion, celery,
tomatoes, and spices to make this large pan of stew. It just hit the
spot, and I have enough to last several days. Some people like corn
bread with their stew, but I like crackers. I have plenty of both.
The weather is still dreary out, and the sun refuses to shine. I'm
finding it hard to stay out of the kitchen, and I do not want to gain
back the seven pounds I had lost. This coronavirus is causing all
kinds of problems with people who were doing fine before the media
got a hold of it. I'm trying to stay positive, but that is hard to do
when Satan has every imp working around the clock for him. He can
never defeat me, and he knows that, but he won't give up. My three
sons are all positive, and they always think on the good side. I
talked to my middle son in Houston this morning for a long time. He
seemed so calm, and collective. He just reassured me of what my other
two sons had said. Nothing to panic about.
I also talked with my sister in Albuquerque this morning. She too seemed very calm, and is ready for whatever comes our way. She said all the churches, and schools are closed there, but it didn't seem to worry her at all. Albuquerque is a very large city, and I can't imagine all these things being shut down. Still most people are staying positive. All of my family are on the bright side. I am very proud of them. My daughter, and son-in-law are still looking forward to coming to be with me on Mother's Day, May 10. We have a big day planned. That's a little less than two months away, so we have awhile yet to stay positive, but something to stay positive about. I also have an old friend who is moving back to Perryton this next week-end. That helps to keep me positive. She moved away about twelve years ago, now she wants to come back. I got a call from her last night saying she had rented an apartment here. She asked me if there were still lots of fun things we could do here. I told her yes, and didn't mention the coronavirus thing, although she already knows about it. So far not one thing has been shut down here in Perryton. Everyone seems to be in their normal mood. I am very thankful to my God for that. Our Senior Citizen's Center is still going strong, and no one seems to get sick. The biggest fear is being careful not to fall. It's hard to believe we are not as young as we used to be.
